Homemade Split-Top Bread Recipe

Ingredients    

  • 3 c. stone-ground whole wheat or graham flour
  • 2 pkgs. quick-acting active dry yeast
  • 2/3 c. honey
  • 1/4 c. shortening
  • 1 tbsp. salt
  • 2 1/4 c. warm water (120-130 degrees)
  • 3 to 4 c. all-purpose or unbleached flour
  • 1/4 c. butter

Steps

  1. Mix whole wheat flour, warm water, honey, shortening, salt, and yeast in a bowl. Stir in enough flour to make the dough easy to handle.
  2. Turn dough on a lightly floured surface and knead until smooth and elastic.
  3. Place dough in a greased bowl. Then, cover the dough and let rise in a warm place until double.
  4. Divide dough into halves. Let rest 5 minutes.
  5. Flatten each half with a pin on a lightly floured surface. Make dough rolls and pinch edges of dough to seal well.
  6. Place loaves in greased loaf pans. Brush loaves lightly with butter and sprinkle oats or whole wheat flour if desired. Let the loaves rest until double.
  7. Use a slightly sharp knife to create a 3/4 inch split down the middle of the loaf. Pour in melted butter mixed with some honey.
  8. Bake at 375 degrees for 40-45 minutes.
  9. Done!
