  • 1 Cast Iron Skillet

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 bell pepper, finely diced
  • 1 cup diced mushrooms
  • 1 cup tofu, diced
  • 1/2 cup cherry tomatoes
  • 1/4 cup unsweetened plant-based milk
  • 1/4 cup nutritional yeast
  • 4 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • Salt and pepper, to taste

Instructions
 

  • Preheat your oven to 350°F (180°C)
  • Heat the olive oil in a large cast-iron skillet over medium heat. Add the onion and bell pepper and cook until they are softened, about 5 minutes.
  • Add the mushrooms, tofu, spinach, and cherry tomatoes to the skillet and cook for an additional 5 minutes, or until the vegetables are tender.
  • In a small bowl, whisk together the nutritional yeast, plant-based milk, cornstarch, garlic powder, onion powder, turmeric, salt, and pepper. Pour this mixture over the vegetables in the skillet and stir to combine.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is set and the edges are golden brown.
  • Serve the frittata hot, garnished with fresh herbs if desired.
